Banana Bread (Vegan)

Ingredients (use organic ingredients where available):
1 package Simply Organic Banana Bread Mix
2 egg equivalent powdered egg replacer
3/4 cup warm water
2 ripe, peeled and mashed medium bananas

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine banana bread mix and egg replacer. Mix in
water and mashed bananas. Stir until just moistened.

Pour into lightly greased 9- x 4-inch loaf pan. Bake for 50 to 60
minutes, until center tests done with a toothpick or knife. (May take
5 to 10 minutes longer, depending on oven.)

Cool for 15 minutes in pan, then remove loaf from pan and finish
cooling on rack. Cool completely, as bread will slice better.

Chef Suggestions:
Serve plain or toasted, or as a basis for an unusual bread pudding.
Use organic ingredients when possible.
