Check out this Simple Organic recipe!

Banana Bread (Vegan)
Prep Time: 5 min
Cook Time: 60 min
Rating: Unrated
Ease of Preparation: Easy
Servings: 15


Ingredients (use organic ingredients where available):
1 package Simply Organic Banana Bread Mix
2 egg equivalent powdered egg replacer
3/4 cup warm water
2 ripe, peeled and mashed medium bananas

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine banana bread mix and egg replacer. Mix in
water and mashed bananas. Stir until just moistened.

Pour into lightly greased 9- x 4-inch loaf pan. Bake for 50 to 60
minutes, until center tests done with a toothpick or knife. (May take
5 to 10 minutes longer, depending on oven.)

Cool for 15 minutes in pan, then remove loaf from pan and finish
cooling on rack. Cool completely, as bread will slice better.

Chef Suggestions:
Serve plain or toasted, or as a basis for an unusual bread pudding.
Use organic ingredients when possible.

As prepared, each serving contains 80 calories, 0g total fat, 0mg
cholesterol, 150mg sodium, 20g total carbohydrate and 1g protein.

Life is always hectic=)



I am so sorry to not be spending more time writing. Life has been ongoingly challenging. B.J. and I have begun couples counseling. This is a very good thing. It is not because of fighting it is to help us gain skills to cope with the challenges of day to day life as well as the challenges of raising a preteen.

I have also discontinued the use of the drug Effexor. This is my last week in the tapering off process. Next I plan to begin using enzymes to help with digestion and aiding weightloss.

The school has finally arranged for a 504 behavior plan. I am quite happy with the outcome and hope the implamentation process goes as well.
